Recipe: Healing Bone Broth


Healing bone broth People have been making healing bone broths for centuries. Making broth is a great way to transform things that might otherwise get discarded into a deeply nutritive and medicinal food.

Use the broth to make soups or other dishes, or just reheat and sip from a mug like you would tea. The minerals found in animal bones and cartilage are the same that we need for healthy bones and joints.

You can find the astragalus root, goji berries and dried mushrooms at a health food store, Chinese herb ship or online. A good online source for these things is Mountain Rose Herbs.


1 1/2 gallons of spring or filtered water
1 chicken or turkey carcass (or any bones leftover after roasting and picking the meat off)
3 carrots
3 celery stalks
1 onion
Any combination vegetable odds and ends (carrot tops, the outer layer of peeled onions, kale stems, etc.)
A few handfuls of whatever herbs you have on hand (parsley, cilantro, thyme, rosemary, etc.)
A knob of ginger
2-3 bay leaves
1 tsp black peppercorns
1-2 hot peppers (optional)
1/4 cup dried goji berries (optional)
1/2 cup dried astragalus root (optional)
8-10 fresh or dried shiitake, maitake or reishi mushrooms (optional)
Sea salt to taste


1. Place the chicken or turkey carcass in a large pot and cover with the water.

2. Add 2 T. of apple cider vinegar to the water and allow to sit for an hour. This helps to draw minerals out of the bones.

3. Add all of the other ingredients (except for the salt) to the pot and bring to a boil.

4. Low the heat to medium and allow to simmer for 2 – 4 hours.

5. After 2 – 4 hours, turn off stove, add salt to taste and allow to cool for about an hour.

6. Strain out the solids using fine mesh strainer and pour into containers to store in the refrigerator. Freeze some if you won’t use it all within a week.

  1. Bone broths have been my go to this fall and coming winter. They are so nourishing and large amounts can be made to be used in a variety of soup or rice dishes. I often make enough to freeze in 6-8 25 oz mason jars at a time. rnrnAs I am not one to take medications or give it to my family, when either one of us is coming down with a cold or are just looking for a delicious broth as a soup base, these bone broths are a must!

    What about the toxic elements, antibiotics, growth hormone etc. that would be in the bone? I don’t think I want that kind of flavor in my broth.

    • Thanks for your question. You can avoid all of these things by using bones from an animal that was raised without any hormones or antibiotics, and fed a natural, preferably organic, diet. In fact, I strongly recommend verifying that this is the case for any animal products that you choose to include in your diet.
